In elementary school, I had a boy in my class named Zach. Zach's family did meal planning the old fashioned way. They had the same dish based on the day of the week. Zach used to holler out in the bus, "Yeah! It's Monday. We get spaghetti.!" or "Yippee - Friday is pizza day." At the time I thought how boring to have the same ole meals every day of the week. My Mom was an adventurous cook and tried new dishes half of the days of the week. As a mom though, I can see the simplicity in doing things like that, although I still don't think it's the way for me. I have had friends who use the days of the week for themes in their meal planning. Italian on Mondays, Mexican on Tuesdays, etc. That way you get some variety but a good system too.
I know for many, Friday is a great day for Pizza. I think after this past Friday, the Fish Sticks are ready to declare Pizza Friday in our house.
I made a homemade whole wheat pizza crust - a new for us but it seemed a big hit. I used my new mini skillets (that actually were meant for large cookies).
I spread the bar with toppings and sauce. The sauce is so easy. It's only a small can of tomato paste with 1/2 cup of water and spices like oregano, basil, onion powder and garlic powder. Perfect and so easy.
The Fish Sticks made their way through the line, piling on the toppings just like they like it and I put them in the oven for about 10 minutes.
With the leftover dough, I made a large supreme for My Man and me. So easy and I just used what we had on hand (other than purchasing pepperonis). Top off with a Red Box and ice cream and you've made a super fun family memory!

Roman Bread Pudding
In History last week we came to study the Romans. The book occasionally give recipes for the lesson or a craft. It seems that we rarely do them although Ruth begs and begs. We just run out of time or just forget.
So I promised we would try the Roman Bread Pudding. It sounded a little like French Toast to me and the ingredients sounded very healthy. You soak bread in milk and fry in olive oil and top with honey.
I thought it looked like a pretty good lunch. I also thought it tasted pretty good. The Fish Sticks review? Well, they said it was soggy and so it wasn't heartily consumed. Oh well. Surely if the Romans ate it, it should be good enough for Fish Sticks. Maybe we should try the Victorian 4 poster bed craft made from a box next time. They might like that better.

A New Shopping Experience
Today was a bit nostalgic for me. Each year when my homeschool kids do standardized testing, I have 2 hours each day to kill. The testing location is in an area of Nashville in which I never go. It's kind of fun for me to explore another area of town.
Today I did a google quest for my bank so I could make a deposit. It took me to a building that took me back to my days living in Singapore - in a very good way. High rise grocery stores as clean as clean can be. Several story high parking garages. Buildings connected so you can freely go from one place to another and get back to your car with ease (assuming you remembered what level you parked on).
My GPS took me to a 3 level parking lot combined with my bank and Harris Teeter. They actually had valet parking for free but I just couldn't bring myself to unloading myself and 2 Fish Sticks from my large van to a valet. It just didn't seem right to me. Now if I had been wearing my fur mink shawl from Great Aunt Gertrude, I might have considered it.
I was a bit nervous pulling my 12 passenger van into the parking garage. I just knew I would hit top. I didn't, but my antennae went "boing" once. We took the elevator and landed in the bank. Walked across the way to Harris Teeter where they had another elevator for the pharmacy and paper products level.
The Fish Sticks thought we were at Disney - well not really - they've never been to Disney but they thought it was a huge treat to ride an elevator, taking turns to push the buttons while riding in a car buggy.
So I hit the last day of super double coupons. I got 1 tube of Aquafresh for kids for 79 cents, 4 items of Garnier hair products for $1 each, 3 packs of Carefree liners for FREE, 2 packs of Tums for FREE, 2 packs of cat treats for FREE and 6 packs of Dentyne gum for FREE. My receipt says I saved $30.33 in coupons and my total was $8.24.
Not bad and quite fun, I must say for this city-gone-country-girl.

Yucky Warts
I hate warts. They are pretty yucky little boogers. My Little Guy had this one on his foot. Pretty big and nasty looking. I ignored it for a few months -like any good mother would do, right? - hoping it would just go away. Well, it didn't. So I purchased a box that claimed it would freeze the wart off in 2 weeks with just one application for $15. This is what it looked like (above) after 2 applications 2 weeks apart. Wish I could get a refund!
Then my friend, who shares with me in her love for home remedies, told me about apple cider vinegar. I tore a piece of cotton off a cotton ball. I dripped 2 drops of apple cider vinegar on it and taped it over the wart at bed time. He took the cotton off each morning. After 5 days, it looked like this (below).
Amazing!!! I did the same to my daughter who had a much older wart on her foot that was pretty deep. It took about 3 weeks to surface, but last night it was totally gone. Now wasn't that cheaper and better? Tuck that away for when you might need it (and try to forget the dirty feet photos of My Little Guy - I think they are permanently stained!).

Shopping this Week
I thought I'd give you a new backdrop today instead of my dark wood dining room table. Today it's the bright and cheery architectural drawings from My Man's office. :)
Today was an interesting shopping day at Walgreens because I got tons of things that were not on my list.
My plan was to get Menopause Relief Tabs for $10 and get a $10 RR so they would be free. They were out of those so I might check back.
Second on my list was Kotex U tampons for $3.99 getting $3 back in RR and I had a $1 off coupon making them FREE!
Third on my list was Psoriasis Relief cream for $5.00 getting $5.00 back in RR making them FREE!
Then I passed the clearance aisle. I found Disney princess polly pockets for $1.60 a piece. I took them all - all 6. Not only would my girls love these, but they would make great gifts. Then they had packs of Starburst for 33 cents each. I got 6. The Fish Sticks will get a big treat today at the baseball game. The mint M&M's were also 33 cents so I got 6 of those for later surprise treats. The grape Twizzlers were 63 cents a pack and I got 6 of those for later use. Last I got packs of Dentyne gum for 33 cents each and got 8 of those.
So although these clearance items were unexpected, I only spent about $20 for them and they will go into the stock pile.
In CVS I got 3 American Greeting cards, choosing only the 99 cent cards, because I got $3 ECB back, making them FREE. The Blink eyedrops were $8.99 with a $8.99 back in ECB but I found one box on the shelf with a $4 off coupon attached to it, so I made $4 from that purchase. The Dream Water Supplement was $5.79 with $5.79 back in ECB making them FREE as well. The U by Kotex was $3.99 with $2 ECB back and I had another $1 off coupon making them only $1 for the box. My Man just found out that Children's Allegra is bringing him great relief from his horrible allergies (Oh if only I knew that 6 months ago!) and so they had them on sale for $9.99 each and I had a $2 off coupon.
In sum, all the items you see above (minus the Allegra) cost me nothing and I made $3! Not bad.
We have a wrap up with baseball season this week plus standardized testing 3 out of the 5 weekdays, so posts might be slow this week, but they are all in my brain and I hope to get them out to you soon. I want to tell you about my new favorite, ultra-healthy recipe, my attempt at ancient Roman pudding making in homeschool, a post about cleaning house and one dear to my heart right now about over-commitments. Oh yea, and I hope to run in Harris Teeter this week during testing time to grab some freebies from super double weeks if they aren't wiped out already.

Lunch Rut?
I get into a lunch rut with my kids sometimes. I try to mix things up a bit so they don't get tired of the same ole thing. My Fish Sticks who stay at home with me are not crazy about sandwiches. They eat them occasionally, just don't prefer them.
I try to think of the basic food groups that I want to include in their lunch and come up with variations.
Today their protein was almonds, dairy was a cheese stick, carb was whole wheat pretzels and veggies were a carrot and homemade tomato juice.
Nice change from the typical PBJ sandwich, chips, apple and cookie.

Repurposed Easter Dresses
I love to sew and when I just had 2 Fish Sticks, I probably smocked and sewed a dress a week. Thank goodness I still have those dresses to pass down to consecutive Fish Stick girls because I have NO time to sew and smock now.
BUT my goal is to make the girls an Easter dress....if it's the last thing I do.
I love picking out cute fabrics and patterns each year but oftentimes getting 4 different sized dresses done during the Easter season is quite stressful and tight.
My oldest daughter just turned 11 and she's gotten quite particular about her clothing. I'm so thankful that it's not fashion driven and yet I must bite my pride sometimes and not comment when I see some of the outfits that she wears. She is driven by 100% comfort. This means that most days are baggy, soft sweatpants and t-shirts. It makes me sad because her closet is PACKED with adorable corresponding Gymboree hand-me-downs from her cousin. I hope that some other Fish Stick will wear them later.

So when I was planning their outfits this year, I went to her first. She said "COMFORT" (of course).
I was getting groceries at Sam's when I saw these....women's skirts/swim suit covers for $13 a piece. Very soft knit. My brain started cranking and I grabbed 4 in different colors.
I sewed down the side of each and used the excess fabric to make spaghetti straps. The smallest one was the only one that I had to hem also. Voila!! Easter dresses that are so soft and comfortable (meaning they will be worn again and again without being forced) and they only took about 30 minutes each to make!

I'm Back
Did you notice I took a little vacation? It wasn't the vacation with warm sand under my feet, the sound of crashing waves and sea gulls, an iced tea in one hand and a good book in the other.
It was a spring break with a trip to the zoo, spring cleaning, lots of laundry, friends over to play, a short trip (and might I add in our "new" 12 passenger van! WHOO HOO!) and Easter celebrations. This was followed by a week of diving head first into school with 4 baseball games in one week, Colonial Day involving model houses with popcycle sticks, Native American costumes and corn husk doll crafts and a Fish Stick birthday.
For the past 2 weeks I have been composing blog posts in my head that get lost in the midst of busyness.
To sum up last week, I took a break from the coupons. I did go to Walgreens and grab a few boxes of cereal for a good deal but that was it for us. It's kind of nice to take a break here and there as long as my Register Rewards don't expire! :)
So I'm back and I've already printed off my couponing list and made my weekly to-do list along with meal plan - still working through our meals of "Living out of the Pantry".
Unfortunately this week's calendar doesn't look much better than last weeks, but I will do my best to post a few things.

Super Supper
For Meal #2 of Pantry Meals, we had Bacon Cheeseburgers with Steak Fries. The burgers were neat because you mix dry onion soup mix, oregano, egg, cheddar and mozzarella into the ground beef before forming it into patties and grilling it. YUMMY!
The Fish Sticks were teasing me for taking a photo of My Man's plate before letting him eat it that they all posed for a photo to show you how much they liked their meal.

Riding the Fence of Nutrition
I wanted to dedicate a few posts on nutrition starting by what I call my nutrition testimony.
Like I've told you, after getting married in 1995, I was loving the cooking aspect of my new job. You could have nick named me Casserole Cassie because if it had cream soups, cheese or sour cream in it, I was game to try it. That kind of cooking is usually pretty yummy but pretty heavy on producing the extra pounds. Not exactly what I would call nutritious meals.
In about 2001 I started reading more and more about nutrition. At this time, my view of nutrition was buying the low fat cheese or fat free cheese (now that is nasty!) instead of regular cheese or getting low fat frozen yogurt instead of ice cream. Little did I know that my view was FAR from nutritious.
I wish I had made a list of the books that I read on the subject but I didn't. I tell you though, you would be impressed because it was a lengthy list. I read Dr. Andrew Weihl, Jordin Rubin, Nourishing Traditions, What the Bible Says About Healthy Living (Rex Russell) and many, many more. Part of my passion came from a quest to just return to my pre-pregnancy weight before the next pregnancy arrived. I had done the Weight Watchers thing with success but after reading some of the above books, I became more and more convinced that that wasn't healthy eating in the way I was searching for it.
The problem was that I was convinced in what I was reading to be good and true. Basically in a nutshell, I learned that we, in America, have so processed our foods that they are no longer healthy and nutritious. In my humble opinion, we have probably created the monster of cancer and many other illnesses that American die of today from the processing of our food and our lack of nutrition. What is good is to get back to eating food the way that God made food. Try to eat it in it's purest form.
Sometimes after reading a book, I would be so motivated, it would almost overwhelm me. How could I eat the way I wanted to, keep within my budget and not live in my kitchen preparing everything from scratch?? It was a big source of frustration.
Along the way though, I have learned that balance is important. I know there are total food purist out there and I admire them for being able to live eating purely in a society as ours. I also realize that many of those purist might not realize the inconvenience that they can cause on others or the feelings of condemnation when they forbid their child to eat a cupcake at a friend's birthday party because it is "poison" or when they ask "How can you serve that Kool-Aid? Do you realize what is in that and what it does to your body?" (I have known folks who have done both of these.)
The solution I have found for eating well is taking baby steps. Our first baby step was 9 years ago when we started drinking raw milk. We are hooked and never want to go back to store bought. Does this mean that we don't drink store bought when we are served it? Of course not. Next we bought our own chickens to lay eggs. One year I was able to buy half of a butchered cow, a lamb and half of a pig to fill our freezer. I would love to do that again. I don't buy organic as often as I would like, mainly because of the price. We grow a huge vegetable and fruit garden that supplies us with most of our vegetables throughout the year. Two years ago I took the plunge and bought a wheat mill to grind my own wheat and I started making our bread. It's superior to store bought and we love it. I still buy some store bought bread because one picky Fish Stick just can't seem to enjoy the good stuff. I have hopes for her one day though. Last year we butchered 75 chickens to fill our freezer. It was a learning experience and we might give it a go again.
These are all just gradual, baby steps that we have taken on my quest for better nutrition. I am not a purist though. Go look in my pantry. You will see I have sugar cereals, a few condensed cream soups, crackers, packaged chips for school lunch boxes and even Oreos and cake mixes. I buy these sometimes for my own convenience and sometimes for budget reasons. We don't overdo them, but we do eat them.
So now you know where I am coming from. One day you will get the best whole foods recipe from me and the next post will show you all the Fruity Pebbles that I bought for $1 a box with coupons. Go figure. :) I guess I'm just riding the fence of nutrition.

Sometimes after reading a book, I would be so motivated, it would almost overwhelm me. How could I eat the way I wanted to, keep within my budget and not live in my kitchen preparing everything from scratch?? It was a big source of frustration.
Along the way though, I have learned that balance is important. I know there are total food purist out there and I admire them for being able to live eating purely in a society as ours. I also realize that many of those purist might not realize the inconvenience that they can cause on others or the feelings of condemnation when they forbid their child to eat a cupcake at a friend's birthday party because it is "poison" or when they ask "How can you serve that Kool-Aid? Do you realize what is in that and what it does to your body?" (I have known folks who have done both of these.)
The solution I have found for eating well is taking baby steps. Our first baby step was 9 years ago when we started drinking raw milk. We are hooked and never want to go back to store bought. Does this mean that we don't drink store bought when we are served it? Of course not. Next we bought our own chickens to lay eggs. One year I was able to buy half of a butchered cow, a lamb and half of a pig to fill our freezer. I would love to do that again. I don't buy organic as often as I would like, mainly because of the price. We grow a huge vegetable and fruit garden that supplies us with most of our vegetables throughout the year. Two years ago I took the plunge and bought a wheat mill to grind my own wheat and I started making our bread. It's superior to store bought and we love it. I still buy some store bought bread because one picky Fish Stick just can't seem to enjoy the good stuff. I have hopes for her one day though. Last year we butchered 75 chickens to fill our freezer. It was a learning experience and we might give it a go again.
These are all just gradual, baby steps that we have taken on my quest for better nutrition. I am not a purist though. Go look in my pantry. You will see I have sugar cereals, a few condensed cream soups, crackers, packaged chips for school lunch boxes and even Oreos and cake mixes. I buy these sometimes for my own convenience and sometimes for budget reasons. We don't overdo them, but we do eat them.
So now you know where I am coming from. One day you will get the best whole foods recipe from me and the next post will show you all the Fruity Pebbles that I bought for $1 a box with coupons. Go figure. :) I guess I'm just riding the fence of nutrition.
Deals This Week
I decided not to go to Walgreens this week. I just didn't see anything that really struck me. So at CVS, I got contact solution for free with ECBs, 3 boxes of Garnier hair coloring foam for 33 cents each (Sara, these are for you. I hope I got the right color.), a box of Allegra D for free with coupon from Sunday's paper and some Easter candy. They had ECBs on 4 bags of Hershey's/Reeses and I had coupons for $1 off 2 bags. They also had ECBs on Starburst and Lifesaver jelly beans which I also had a $1/2 coupon for. The CVS coupon scanner had $2 off a $10 purchase of candy so I paid about $1.33 per bag.
Kroger had Pure Protein bars for $1 each. The nutritionist that My Man and I went to see last year said that these are the best protein bars out there based on carbs, sugars and protein so I try to keep them on hand. I had coupons for $1/2 making them 50 cents each but a while back I realized that the $1 off coupon for Pure Protein powder actually works for the bars too making them free. For these 7 bars, I only paid $2.

Pantry Meals - Meal 1
Tried meal one of Mom Advice's pantry meals tonight.
Pretty good stuff.
I know my gravy is chunky. You should have seen me running to the back porch to grab the almost burnt steaks off the grill, while the the timer for the pasta was ringing and the flour/butter needed to be stirred CONSTANTLY to make a nice smooth gravy. Oh well. Steaks were a bit over done for me (I am a rare girl) and gravy was lumpy but still tasted good. One Fish Stick asked if she could eat it with a spoon.
Hope y'all give those easy meal plans a try.
Bacon Cheeseburgers and Steak Fries tomorrow night! YUM!
