My Favorite Vegetable

I love vegetables and one of my very favorite is spaghetti squash. This was my first year to grow it in my garden.

My best way to eat it is to cut it lengthwise, scoop out the seeds, lay open side down in dish with about 1/2 inch of water. Microwave 10 minutes. Scoop out with a fork. Add salt, pepper, butter and fresh Parmesan. Delicious!!!
A great lunch!!

Great Mac-N-Chac

I don't have a picture to show you for this dish because it was gone before I got my camera out.

Do you love macaroni and cheese like we do but are not crazy about the processed shelf cheese or powdered cheese?  Here's a super and easy recipe that my Papa shared with me when I was newly married.

Cook one package of noodles according to the directions.  (Today we did penne but usually use elbow)
Drain and add 1 cup evaporated milk and 1 1/2 cups shredded cheddar.  Stir well.  Voile!!  That's it.  It looks like Velveeta Macaroni and Cheese and tastes wonderful.  Give it a try!

Grilling Side Dishes

 On Independence Day my mom served a super appetizer and I knew I had to try it on my own.  She said she found the recipe in the newspaper.

First slice green tomatoes and marinate them in equal parts of olive old and balsamic vinegar and sprinkle them with coarse/kosher salt.
 While it's marinating, slice fresh mozzarella and have whole basil leaves ready.  Thank goodness I had a basil plant this year.  I've never bought fresh mozzarella but it was worth the $3!
 Lay marinated green tomatoes on grill and grill on both side until soft but not mushy.  Lay a basil leaf on each slice.
Lay the cheese over the basil leaf and grill just a tad bit to melt the cheese slightly.  Absolutely delicious!  I didn't take a pretty picture of them on the plate because they were gone by the time I got my camera ready!!
